Zadwiga’s Spiced Pear Muffins

Zadwiga’s Spiced Pear Muffins is a recipe from Rhonda from Sunapee who replied to a call for recipes to start a good-food exchange, the sharing of information about healthy menu choices and sustainable agriculture.

Back to the kitchen…

“My Grandmother’s (Zadwiga was her Polish name) way of teaching me to cook was very interesting,” said Rhonda from Sunapee. “She said that all recipes are flexible. It is up to the individual to create around the recipe. So I created this spiced pear recipe with her in mind. I also make a spiced pear cake by using the prepared pears, arranging them in a 9-inch cake pan, and then pouring a homemade yellow cake batter on the top.  It’s like an upside-down pineapple cake, just with the blend of spiced pears.”

“Unfortunately, my Grandmother saved and cooked with all the rendered animal fat (she never threw anything away). Notice I use shredded apples instead of a fat in the muffins. I think she would be proud of my healthy alternatives!”

Zadwiga’s Spiced Pear Muffins
Preheat oven 375 degrees. Makes 24 muffins.

3 large pears cut into ½ inch cubes
½ c flour
¼ c sugar
3 tsp Cinnamon
1 tsp Allspice
1 tsp Ginger

In bowl, coat pears with dry mixture and set aside.

2 large (or 4 small) coarsely shred apples
2 eggs
2 tbsp canola
1 ½ c milk at room temperature
4 c flour
½ c sugar
6 tsp baking powder
2 tsp salt

Blend well first four wet ingredients. Next, sift flour into wet mixture. Blend until moist. Gently fold in pears. Spray canola into muffin pan and fill to top. Bake approximately 30 minutes.

Flex options and hints: Use half white/half whole wheat white flour. Add ½ cup half ground flax/half wheat germ blend to the wet mixture before adding sifted dry ingredients. After muffins are removed from the oven-lightly spray with canola and sprinkle cinnamon sugar over the tops.
